Our classes start at $45.00 per person. Please contact us for exact pricing based on number of guests and the produce we are preparing. Class length generally will run 3 to 4 hours. Time is also dependent on food type.
For those lucky enough to have a place to plant and for those who don’t! If you want to take a little time before the season begins to plan for your winter stores, this is the place to start! We will help with things such as “how many tomato plants do I need for a family of four, should I plan for a dozen zucchini for bread for the freezer and how do I contact my farmers to order what I can’t grow”. While we won’t be firing up the stove, this is a great time to learn from others and plan for winter meals that will more than remind you of great summer days!
Cann
ing 101 – A highly recommended beginning!!
This is a water bath class and covers all of the basics of canning at home. Supplies, types of foods and the processes that each requires to be preserved safely and flavorfully. We will cover the “why’s” of the various methods of preserving. This is the class that gets you going with enough confidence to be able to pick up a “canning book” and play with some recipes on your own!
Canning 102 – A more advanced water bath experience
A step up from 101. Assumes you know something about canning and the equipment and supplies needed (we will still provide the equipment). We cover a bit more of the water bath processes and introduce some new techniques such as blanching. Because of the added steps, the foods that fall into this category may cause the class to be a bit longer (3hrs) and is a very “hands on” experience!
Jams, Jellies, Chutney’s & Salsa’s
These are water bath classes that require basic knowledge and familiarity with the process. Ingredients may be more intensive and some courses may require some “prep” before we begin. We cover food types here and look at consistencies, ingredient parings, preparation and finishing tips. Please let us know on the inquiry form which group you are interested in.
Pressure Canning
This is the one that really gets you to that “next” level! We introduce you to a new piece of equipment that allows for processing at higher temperatures for foods with lower ph levels. We will help you learn to control for pressure and will explore new packing methods. Can you say “great green beans!”
Meats and Stocks
For experienced canners that have not ventured into meats and meat stocks. We will look at safe poultry, beef and fish handling and processing methods. This is a pressure canning course and may be a bit longer due to preparation and processing times. A great course for those who love chicken and noodles or hot soups on a winter day!
