How We Work


We have many different options available and below are a few guidelines to help you design your own course. One of our goals is to help foster a sense of community when it comes to your food experience. We find that even the most experienced canners learn from others as this tradition has virtually been passed from one generation to another. Shared experiences of oooops’s and tasty successes are how we grow in our knowledge and confidence. We can’t tell you how many times we have heard “my mom used to…” or “I remember when grandma would….” – These memories never seem to be forgotten! Sooo….

Food Items:
We will do our best to gear your first class toward a food that you think you will use the most and that may inspire you. We will consult with you prior to setting a firm date to ensure that the process is correct for the skill level you are at and that the season is going to provide us with the freshest morsels. After we have determined the best place to start we will set a date!
Private Lessons:
You provide the kitchen and 4 to 8 friends or neighbors (what your kitchen can accommodate comfortably), and the produce* and we will bring all of the equipment necessary….down to the towels and things needed to leave your kitchen sparkling and ready for your next meal. Each class is designed to run 2 – 3 hours. Each guest will have at least one “can” to take home for a later treat!canning equipment

  •  We provide:
    • 1 case of jars
    • lids
    • rings
    • equipment needed to safely process produce
    • reference hand outs
    • clean up supplies.

We will accommodate larger groups depending on space and amount of goods you would like to “put up”. We will also teach in an outdoor kitchen providing proper set up and do require prior inspection before scheduling.

Because most of our classes will be tailored to you and your group, you will find starting prices on our class’s page. They will provide you with a reference point and depending on type and size of class, and food chosen prices may vary. If The Glass Rooster will be bringing your produce this cost will be added to the base prices.

“Sharing our bounty”
The Glass Rooster believes that healthy food should be a right for all and we do support our local food pantry. We encourage your guests to each bring 2 food items that we can donate on your behalf to the Greater Chicago Food Depository or Food Pantry of your choice. If you have a group that you believe could benefit from our teaching we want to hear about them and will place them in a drawing. For every ten classes taught we will draw a name and provide a free course to that group with your compliments!
